Versatile Cashew Dip

The other week, my family asked if I would make some cashew dip.  It has been quite a few months since I had made it, and Lindsey thought it would be a nice addition to burgers or BLT's.  Well, I got distracted and forgot about making it - until today.

I’ve made this dip for so many gatherings we’ve had at our house.  I love putting the dip out with some fresh veggies or with tortilla chips, and then asking people what they think is in it.  Obviously I don’t tell them its cashew dip, and very rarely will anyone figure it out.

You can use this dip as a cheese substitute (for all of you vegans out there).  You can put it on nachos, as a dip with veggies or tortilla chips, as a spread on sandwiches or wraps, or as Lindsey suggested, as a topping for burgers.  And I’m sure there are a number of other uses that I haven’t tried yet.  If you try something different with it you’ll have to let me know!  It's amazingly versatile!


2 cups raw cashews

1/2 cup fresh lemon juice

1-2 tsp. sea salt

2 1/2 Tbsp. tahini (sesame paste)

2 fresh garlic cloves

1/2 tsp. onion powder

1 1/2 to 2 cups filtered water


Place the cashews, lemon juice, salt, tahini, and cloves in a blender (Vitamix is the best!).

Add 1 cup of the water and blend until smooth.  You will probably need another 1/2 to 1 cup water.  Gradually add the water until you reach the consistency you like.  I like it a little thinner, so I can pour it.  If I can’t pour it out of the blender, then it’s too thick for me.  But remember not to put the entire 1 1/2 to 2 cups water in at the beginning - you can always add more water, but you can’t take it away!

When it reaches the consistency that you like, pour into a serving bowl and use - however you wish!

Tonight I made a nice platter of cucumbers, carrots, and red peppers to serve with the dip, and it made a great snack for everyone to munch on while I was making dinner.

Trust me, you will love this dip.  Everyone who has tried it has loved it.  People I thought would never go for it have even asked for the recipe, so don’t hold back - go for it!
