Looking for a refreshing snack to help remind you of what the warmer weather was like (and to bring hope of what is soon to come)? Here’s an easy recipe to do just that!
I’ve been reading The Perfect Peach, by Marcy, Nikiko and David Masumoto for inspiration. They have a large organic peach orchard in Central California and their heirloom peaches are known as some of the best in the world. And, even though we are far from peach season, reading about their peach orchard and perusing all of their recipes created an urge for something peachy.
Since I just had lemon tea this morning instead of my usual lemon and ginger, the addition of ginger into the smoothie was a natural. I actually used to get a similar smoothie years ago at a coffee and smoothie shop in Holland, Michigan. Unfortunately they are no longer open, but fortunately, I remembered this adaptation of their smoothie.
1 10 oz. bag frozen organic peaches
1-inch piece of ginger, peeled (you can use a bigger piece if you really like ginger)
Milk of choice - I used about 1 cup rice milk
Honey to taste (I used about 1/2 Tbsp.)
Put all the ingredients in a blender and mix!
You can adjust the amount of milk based on the consistency you like - more milk for a thinner smoothie, less for a thicker one.
If you really like your smoothie to pack a punch, add more ginger. Bonus - it’s great for your digestion!
