A few weeks ago our daughter, Lindsey (who routinely experiments with food and is a great chef) was making breakfast for me and she whipped together this delicious avocado spread.
She put it between two slices of grilled (gluten-free, for me, of course) bread, and added bacon, alfalfa sprouts, and lettuce. It was sooo good - and good for you!
She has since found a number of other ways to enjoy the avocado spread. Since she started making this, if we don’t have it on our sandwiches, breakfast tortillas, or toast, it seems as if something is missing.
I told her she needed to put this one together for the blog, so the recipe is below.
But first, did you know that avocados are quite a healthy fruit? Yes, they are actually a fruit, and what's more, they are rich in monounsaturated fats - the good fat that is easily burned for energy. They are also loaded with omega-3 fatty acids, which, among other things, are great for brain health.
There is zero cholesterol in avocados; in fact, avocados may even help lower cholesterol!
Avocados also contain Vitamin E, B-Vitamins, and Folic Acid (another great brain nutrient), and are high in potassium (more than twice the amount found in bananas).
There are also tons of the phytonutrients, polyphenols and flavonoids, which are important anti-inflammatory agents.
And, if that isn’t enough, avocados are one of the fruits that really aren't necessary to buy organic... unless you want to, of course! Their thick skin protects the fruit from the pesticides, and even those sprayed with pesticides are only sprayed minimally. Even better, as of yet there are no genetically modified avocados.
So here’s the recipe for Lindsey's Quick and Delicious Avocado Spread:
1 good, ripe avocado
1 tablespoon of goat cheese (or more, if you're a goat cheese kind of person!)
1/2 tablespoon of honey
A drizzle of olive oil
Spoon the avocado into a bowl.
Add a nice coating of olive oil - just enough to count as a drizzle.
Add your salt and pepper
Using a fork, mash these ingredients together until the spread is smooth.
Add the honey and goat cheese, and continue to mash together until the texture is creamy.
That’s it - you are finished! That didn't even take you 5 minutes! Wasn't that easy?
Now you can spread that all over anything. I like to put it on toast with eggs, and maybe even a burger, or a BLT (which is especially good).
Put it on anything and everything - it won't disappoint!
