One of my new favorite snacks is the Acai bowl, and I’ve been making them ever since Mike and I tried one in Nashville last week. We had been traveling quite a bit lately and I was feeling a little tired, and with the ups and downs in the weather, I wanted to make sure our immunes systems stayed strong. So before we got back on another flight, I wanted to make sure we had a nutrient dense snack. We knew our options would be slim at the airport, so we allowed for some extra time on the way to the airport to stop at Juice Bar in the Germantown section of Nashville. They had all kinds of great immune supporting options, but I chose to get a shot of coconut water, wild orange and peppermint essential oil - that really woke me up! And then I ordered an Acai bowl for Mike and I. It had the superfood antioxidant benefit of the Acai berry puree, some almond butter for fat and protein, along with some nuts, strawberries and bananas. It was delicious!!
So, when we got back home and I needed a snack, I made my own Acai bowl. Here’s what I did:
I blended together:
2 packets of Acai puree
1 cup frozen organic strawberries
1 scoop protein powder
1 Tbsp. coconut oil
I poured/scooped the mixture into a bowl and topped with:
1 Tbsp. nut butter (almond, cashew, peanut, or whatever kind is your favorite)
A few strawberries, sliced
1/2 banana, sliced
A sprinkle of coconut flakes
1-2 Tbsp. chopped nuts (I used pecans)
Some like to drizzle some raw honey on top, but I didn’t need any sweetener. It was perfect, as is. I made this for Mike one evening, and he absolutely loved it! You can experiment with your Acai base by blending other fruit with the Acai puree. You can also experiment with the toppings - some like to put granola on top or you can try other fruits like blueberries or cherries, or you can try other superfoods, like Goji berries, or even add some dried fruit like some chopped dates.
