You gotta love Pinterest!
I'm set up to get e-mail notifications of Pins the site thinks I may like, and the other day, it sent me a link to a recipe for these amazing Raw Almond Butter Cups from ohsheglows.
Her picture caught my eye (mine don't quite do them justice), and since our girls love peanut butter cups, I thought it would be fun to try this variation of one of their favorite treats. Plus, I figured it was healthy, gluten free, and raw!
Healthy enough to serve for lunch, right? I could rationalize that!
I made it for the first time the other night, and I was thrilled with how easy it was - preparation time is short, and they only need to be in the freezer for about 30 minutes before they are ready to eat.
It was really late at night when I made them, but Frankie and I stayed up so we could try them. After the first bite, we both looked at each other with big eyes, amazed at how good they were. Frankie doesn’t have to eat gluten free, but she loved them too - which, as always, is a strong endorsement for any recipe (she’s a pretty picky eater).
I know I usually post recipes on Mondays, but I just couldn’t resist sharing this today - check out the recipe for Raw Almond Butter Cups here, and be sure to check out her other recipes too. The pictures are beautiful, and she has lots of options for vegans, and plenty of recipes that are also gluten or soy free.
