So, it's another one of those days... I'm rushing around trying to fit everything in before I leave for Flint to visit my family to celebrate the birthdays of my mom and my brother.
I have to get to the health food store to pick up some organic cream cheese for my brother's cake (Butter Scrumptious), and I have to be to the store and back in time to allow for an hour of prep time and baking before I have to leave for Flint. Plus I have to stop at the store ahead of time to get some bigger planters and soil for my mom's tomato plants I got her for her birthday. Plus I need to pack the fresh strawberries I picked up at the Farmer's Market to take for a delicious alternative to cake for those interested (I'm taking organic whipping cream as well to make some homemade whipped cream for topping the strawberries with and then some Taza chocolate to "shave" on top - I had to bring something that speaks the food language of the season - early Summer!).
Needless to say, I hadn't eaten breakfast by 10:30 and needed to get to the store, so I opened Julie Morris's "Superfood Smoothies" cookbook and it opened to the Vanilla Almond recipe, and I thought I'd give it a go.
After reading through the ingredients, I thought for sure I was going to have to tweak it (mulberries, hemp protein, camu camu powder among other things - strange combinations!). But I thought I would try it first and see how it tasted. I was blown away! It was another hit. The girls ran out to get shavings for the horse stalls and I can't wait for them to get home to try it!
