My daughter found this chicken salad recipe the other day and made it, and it was delicious! The only change to the recipe she made was to use dried cherries instead of cranberries, and of course, since we are gluten free, we just put it on a bed of lettuce one time and the other time we put it on some grilled gluten-free bread.
Just like the recipe states, it's a nice light snack or meal - which was perfect for the really hot and humid day we were having :).
